Make traditional potato skins healthier relying on tasty spices and nixing the heavy cheese, sour cream and bacon. You can cook the skins until they are slightly crunchy. This fulfills the need for potato chips in a more impressive manner. Parmesan cheese adds a salty crunch to the dish balancing out the other flavors, so they are perfect on their own or with dip. These potato skins are hearty enough to fill up your guests!
Ingredients
- 5 large russet potatoes
- 1 tsp. extra-virgin olive oil
- 1/2 tsp. paprika
- 1/4 tsp. salt
- 1/8 tsp. cayenne pepper
- 2 tbsp. Freshly grated parmesan cheese
Directions
- Preheat the oven to 400°F
- Line a baking sheet with foil and coat it with cooking spray
- Peel your potatoes with a paring knife, keeping skin and a small amount of potato flesh (about 1/8 of an inch)
- Place the strips into a bowl and toss with oil, paprika, salt and cayenne pepper, ensuring that each potato skin is coated evenly
- Sprinkle with parmesan cheese
- Bake for about 25 minutes or until golden
