Green Apple Salad With Blueberries, Feta, And Walnuts

Ingredients:

Salad

  • 4 cups mixed salad greens such as leaf lettuce, endive, and radicchio
  • 1 large Granny Smith, cut into small cubes
  • ½ cup chopped walnuts
  • ½ cup crumbled feta cheese
  • ½ cup dried cranberries
  • 2 tablespoons finely chopped green onions (Optional)

Dressing

  • ¼ cup vegetable oil
  • ¼ cup blueberries
  • 2 tablespoons extra-virgin olive oil
  • 2 tablespoons balsamic vinegar
  • ¼ teaspoon salt

Directions

  1. Layer salad greens, Granny smith apple, walnuts, feta cheese, cranberries, and green onions in a large bowl.
  2. Combine vegetable oil, blueberries, extra-virgin olive oil, balsamic vinegar, and salt in a food processor or blender; pulse into a smooth dressing.
  3. Pour dressing over salad; toss to combine.
  4. Chill until serving.
