Ingredients:
For the Salad
- 2 cornhusks, grilled and with kernels removed
- Handful arugula
- 1/4 cup California Giant Berries Blueberries
- Sprinkling of goat cheese
- Pinch of sea salt
For the Berry-herb dressing
- 1/4 cup California Giant Berries Blackberries
- 1 cup fresh mint and basil
- 3 tbsp olive oil
- 1 tsp lemon juice
- 1 tbsp honey or maple syrup
- 1 teaspoon Dijon mustard
- Splash of water
Directions
- Start by making the dressing. Add all the ingredients into a food processor or blender and mix until the herbs and berries have been chopped and combined. Pour in a cup and set aside.
- Add all the salad ingredients into a large bowl and top with the dressing. Mix well. Serve and enjoy!
