Mediterranean Orange Salad with Pistachios

Ingredients:
- 2 Sunkist® Blood oranges
- 3 Sunkist® Cara Cara oranges
- 1 teaspoon Mediterranean seasoning mix
- 3 tablespoons extra virgin olive oil
- 1 Sunkist® lime, juiced
- 1 tablespoon honey
- 2 tablespoons sliced pistachios
- 1/2 cup thinly sliced red onion
- 2 tablespoons chopped mint leaves for garnishing

Directions
- In a small bowl, add olive oil, lime juice, honey and Mediterranean seasoning mix. Whisk it using a spoon until it's mixed well and set aside.
- Slice a little piece off the top and bottom of each orange, so you have a stable cutting surface. Trim away all the skin and pith with a small sharp knife without taking too much off the fruit. Slice oranges horizontally and arrange on a serving platter.
- Now spread the sliced pistachios and onion on top of the arranged orange slices.
- Stir the salad dressing with spoon and drizzle over the arranged salad.
- Sprinkle the seasoning mix as per your taste, then garnish it with chopped mint leaves.
- Let it sit for 5 mins and then serve.
